Medium Sweet
It has a brownish hue, with aromas containing some notes of wood and caramel. On the palate, the acidity and body are well balanced. Aged in French and American oak barrels, using the traditional 'canteiro' process until bottling.
Pairing
The Madeira Wine Medium Sweet pairs harmoniously with fresh tropical fruits, nuts, cakes and fruit tarts. It is surprisingly delightful with soft and aged cheeses.
Consumption Suggestions / Pairings
Madeira Wine Sercial or Dry is perfect as an aperitif. It pairs well with olives, toasted almonds, caviar or smoked salmon canapés. It is equally delightful with fish such as swordfish, tuna or scabbardfish, shellfish, sushi or fish mousses and is sublime with fresh goat or sheep cheeses.
Madeira Wine Verdelho or Medium Dry is excellent as an aperitif, combining with olives, toasted almonds and nuts. Pleasant with consommé, cream-based soups and onion soup au gratin. It is exuberant with Serrano ham, game terrines and cottage cheese, mushrooms and is perfect with foie gras.
Madeira Wine Boal or Medium Sweet is harmonious with fresh tropical fruits, nuts, cakes and fruit tarts. It is surprising and delicious with soft paste and cured cheeses. Subtle with cheese or berry soufflés. It is naturally exotic with milk chocolate, pralines, petit-fours and the traditional Madeira honey cake.
Madeira Wine Malvasia or Sweet is ideal to accompany desserts filled with milk or dark chocolate, spice cakes and nut cookies or shortbread. It is similarly appreciated with boards of soft paste and blue cheeses. Formidable at the end of the meal as a digestive.
Madeira Frasqueira or Garrafeira Wine is a wine aged for at least twenty years in oak casks and therefore presents organoleptic attributes of extraordinary quality and complexity, thus it is considered a meditation wine, harmonizing perfectly with tobacco or just alone.
